Cave Block Chardonnay

Dalrymple Cave Block Chardonnay draws from the estate Cave Block in Pipers River, Tasmania. Its free draining soils and steep slopes produce low yields of concentrated Chardonnay.
The fruit is whole bunch pressed to a mix of new and seasoned French oak barrels. A parcel undergoes wild fermentation. Partial malolactic fermentation naturally adjusts the acidity for balance and structure. There is light lees contact.
Straw green, Dalrymple Cave Block Chardonnay has stone fruit flavours in a framework of natural acidity, fine texture and a long, fresh finish. Cellaring potential is five years.
